Since Cafe YuLong closed, I haven’t had awesome Szechuan style eggplant with garlic sauce. I’m going to try this recipe to make some myself, some night this week. I got some nice organic eggplant at the Farmers’ Market on Sunday. Anyone got a favorite recipe for Garlic Eggplant that differs substantially from this one, that they’d care to share?
