I've been impressed with Jonathan Coulton's cover of “Baby Got Back” for a while. As a folky guitar ballad, it's actually pretty impressive as a kind of love song and general statement of “I don't care what the fashion world says, I like what I like.”
Now here's a folk-style cover of 'Hey Ya' (Outkast), where you can really hear the lyrics. It's also kind of a love song, with a “what is life anyway” subtext. No, really.
OK, I'm officially going to pay more attention to hip hop. There is a lot of stuff here, and it's simply wrapped in a cover that I haven't learned to hear through. To me, most hip hop is like making graphic art with typesetting. I interact with the soundscape, and only now catch a lyric or two. I'll be trying to read more.
