We’re doing buffet lunch a the Toll House in Los Gatos with Mike’s folks, and then a walk-it-off walk somewhere scenic (maybe Hakone Gardens, which, according to their website, is open).
In the evening, we’re going off to a potluck at our friends’ C & L’s place. My contribution is in the microwave right now. 🙂 This is a great dish to take to a potluck, IMHO. It takes only about 20 minutes to put together, and another 40 or so to cook, it’s cheap, and it’s pretty. How ’bout that?!
Sweet Potato Medley
Deep casserole dish (microwaveable, with cover)
One huge garnet yam
One huge jewel yam
One huge yellow sweet potato (asian yam)
Half to 2/3 cup of dried cranberries
Two satsuma mandarin oranges (or other seedless variety)
Olive oil, soy sauce, maple syrup, pumpkin pie spice Put about a half inch of water in the bottom of the casserole dish and add 1 – 2 tablespoons of maple syrup. Cut yams into medium chunks (roughly marshmallow sized, and that’s the closest any marshmallows get to *my* yam recipe, thankee!). Peel and section oranges, tearing or cutting sections in half. If oranges are organic, or well-washed, grate a little peel zest into the dish, too. Add cranberries. Drizzle about a tablespoon of olive oil, maybe 2 tablespoons on top, ditto with soy sauce. Mix well. Sprinkle a little pumpkin pie spice on top. Cover and nuke for 15 mins, then stir and nuke for another 10 – 20 mins (check for tender cubes after another 10 – 12 minutes).
I’m actually nuking this right now, so I’m not sure if I’ve got those cook times right, use common sense. BTW, a handful or two of whole pecan halves makes a lovely addition to this, but for a potluck I’d rather be conservative about nut allergies. Do try it with the pecans if you get a chance, though– yum!
